Chicken skewers

with dulse and raspberry chutney

Serves 4:
• 4 free-range chicken breasts
• 1/2 a jar of dulse and raspberry chutney
• 1/2 a lime
• Olive oil, fleur de sel and freshly ground pepper


First step:
-  Cut the chicken fillets in half lengthwise.
-  On a plate, prepare the marinade, mix the chutney with the grated lemon peel as well as its juice, two pinches of sea salt and three twists of freshly ground pepper.
-  Add the chicken fillets. Sprinkle them with this marinade. Let rest for 30 minutes.
Second step:
 Place the chicken fillets on the skewers.
 Heat two tbsp of olive oil in a frying pan. Once hot, remove the skewers, brown and then return. Cook 10 minutes covered on low heat.
 Check the cooking, enjoy with a fragrant rice and tsukudani.
