Sea Lettuce (Ulva sp.)

This green seaweed, easily visible on our Brittany coastline, is also most common in France, sometimes called “sea sorrel”.
ITS COLOUR:
• lime green to dark green
ITS TEXTURES:
• raw: thin sometimes transparent, but attention
to its character.
• cooked: soft
ITS FLAVOURS:
• raw: delicate iodine
• cooked: powerful, balanced and vegetable
