Nori (Porphyra sp.)

The thinnest seaweed that Bord à Bord works with only has a single cell layer. It is a delicate red seaweed and very rare in Brittany.
ITS COLOUR:
• grey with purple tints
ITS TEXTURES:
• raw: its remarkable finesse does not reflect
its rubbery texture.
• cooked: a little mushy but retains its
character.
ITS FLAVOURS:
• raw: delicate tastes, mushrooms, smoked tea.
• cooked: strong shellfish flavours, be
careful not to cook it too much.
