Ingredients
Makes 4 starters:
◦ 4 mackerel fillets or equivalent
◦ 1 lemon
◦ 1/2 a red onion
◦ 25g of desalinated sea spaghetti
◦ 10cl of pouring cream
◦ 5cl of dry white wine
Preparation
◦ Slice the seaweed, chop the onion.
◦ In a frying pan, sear the fish fillets in olive oil on each side, remove and set aside.
◦ In the same pan, put the chopped onion, sauté, deglaze in white wine and let reduce by half.
◦ Add cream and sea spaghetti.
◦ When the sauce simmers, add the fish fillets and bake them thoroughly.
◦ Adjust the seasoning with salt and pepper.
◦ Grate lemon zest, just before serving.
