Seaside tabbouleh with classic seaweed tartare

La recette du taboulé aux algues, un classique Bord à bord avec le tartare d’algues classique. Le wakame, la dulse, la laitue de mer et les spaghettis de mer qui composent le tartare d’algue s’allient parfaitement à la préparation d’un taboulé pour apporter une délicieuse touche fraîche et iodée. C’est une préparation de taboulé aux algues rapide qui se consomme idéalement avec des tomates de saison.

Ingredients

Serves 4:
◦ 400g of cooked quinoa
◦ 110g of classic (or lemon confit) seaweed tartare
◦ 2 fresh field-grown tomatoes
◦ 8 yellow cherry tomatoes
◦ 1 courgette
◦ Spring onion or red onion
◦ Chive, flat parsley and coriander
◦ 1 lemon
◦ Olive oil

Preparation

How to make:
◦ In a bowl, mix cooked quinoa, diced tomatoes, cherry tomato halves, small cubed or grated zucchini.
◦ Add 1 finely minced onion, chopped herbs.
◦ Season with seaweed tartare, lemon juice, 2 tbsp olive oil, and adjust the seasoning with sea salt.
◦ Serve well chilled with mint leaves.

The special trick


TOP TIP

When they are out of season, replace the fresh tomatoes with sun-dried tomatoes, raisins and cooked chickpeas.
