Salmon, apple and radish ball with classic seaweed tartare

Recette de Sphère de Saumon, Pomme et Radis au tartare d’algues classique par Bord à bord. Cette délicieuse recette de sphère de saumon est une plaisir aux yeux et en bouche. Ingredients

Serves 4:
• 4 large pieces of organic smoked salmon (or 8 small ones)
• 1 green apple
• 1 bunch of red radishes or 1 horseradish
• 1/2 a jar of classic seaweed tartare
• Organic olive oil
• Lemon juice



Preparation

First step:
  Wash the apple, cut into a fine julienne (sticks) without peeling it, then squeeze lemon juice.
  Stem the pink radishes, wash and also julienne. If it is a black radish, peel and julienne.
  Prepare the salmon slices so that they are very even.
  Mince the trimmings.
  In a container, mix the trimmings, apple, radish, seaweed tartare and then season with olive oil. Store.

Second step:
  Spread a square of food-grade paper/cling film, about 20 by 20 cm.
  Above, arrange a slice of salmon or two small pieces, slightly overlapping them.
  Place a spoon on it for preparation.
  Form a ball by bending the corners of the film, then turn this ball to press or compress.
  Repeat as many times as necessary. Leave for 1 hour in the refrigerator.
 Prepare and enjoy.
