Wakame (Undaria pinnatifida)

Wakame is a brown seaweed of Asian origin, which is a seaweed culture in Brittany. It grows on lines that are stretched between buoys. It is the most sold seaweed in the world.
ITS COLOUR:
• green to brown
ITS TEXTURES:
• raw: fine on the exterior, somewhat elastic
or even gelatinous, crispy in its middle part,
which is referred to as “stipe”
• cooked: soft
ITS FLAVOURS:
• raw: ocean taste
• cooked: balance of ocean and iodine flavours
