Scallop and oyster tartare with nori seaweed tartare

Makes 8 toast bites
◦ 1 Oyster
◦ 2 Scallops
◦ 2 blinis
◦ 1tbsp of nori tartare
◦ 1 tsp of trout caviar
◦ 1/2 an untreated lemon


First step:
◦ Cut the scallops and oysters into small cubes (brunoise). Store in the refrigerator.
◦ Cut 8 rounds in the blinis.
◦ When serving, toast the blinis, mix all the ingredients and add some lemon zest. Adjust the seasoning with the soya sauce, if necessary.

The special trick

Make sure the scallops are tender! Handle the mix lightly to avoid a chewy texture!
